Beef Chili
This is a simple go-to chili. Easy to make and full of flavor. I try to make it similar to the tastes of texas red, but my wife insists on beans, so I add them. Hope you enjoy it.
Arroz con Pollo +
I have been making this dish for 25+ years, taught to me by my Cuban Father-in-law. I usually make a large paella pan of this, but today I'm going to cut my original recipe by 1/3 and see how it goes.
Chicken Morengo
I first made this in college for my then Girlfriend, or maybe she made it for me, I don't remember. Either way, the dish stays in my repertoire.
Turkeyday Light
I have a taste for Thanksgiving day flavors more than once a year, so today I did a light version of it that included Dressing, Bone-in Turkey breast, and cranberry sauce.
Pepper Steak
I've made this since I was in college. I'm not sure if this was my friends Volks recipe or if it was mine. At the time, we could only afford round steak, but now I use a hunk of sirloin, it's much more tender. It's got some good flavor!

Ok, the picture is not that good, but the flavor in this great. I was watching "best thing i ever ate" and Alton Brown detailed this pasta dish made by Jonathan Waxman.
Homemade Brownies
I was watching the "Best thing I ever ate", and they made these Palmer House brownies - apparently the first ever made at the St Louis Fair.
Peppercorn Cream Sauce
I like to serve this sauce with Filet Mignon. Very easy and full of flavor. You can go crazy and add cognac or whatever.
