Ingredients
- 3 Red, Yellow, Green or Orange Peppers
- 1 pound ground beef
- 1/2 cup onion diced
- 2 cloves garlic minced
- 3 Tbsp. Tomato paste
- 1 14oz can of petite diced tomatoes
- 1/2 cup cooked rice (per package directions)
- 1 Tbs. Olive oil
- Salt and Pepper to taste
- Mozzarella Cheese (optional)
Steps
- Preheat Oven to 400F
- Brown Ground beef over medium high heat, drain fat
- Cut the peppers in 1/2 and remove any seeds, stems etc..
- Oil or use cooking spray in a small baking dish, add the peppers, cover with tin foil and bake 15 mins
- Add onions to the beef mixture in a pan, and cook until translucent
- Add tomato paste and stir to combine
- Add tomatoes, garlic and cook 5 mins
- Remove from heat, and stir in the rice
- Add Salt and Pepper to taste. The rice and beef need plenty of salt.
- Combine beef, rice and stuff into each pepper
