- 12-15 lb fresh turkey
- For Brine :
- 2 gallons cold water
- 1 cup kosher salt
- 1 cup brown sugar
- bunch of rosemary/thyme
- 1 orange, lemon, lime cut into wedges
- My dressing :
- 1/2 (14oz) bag corn bread stuffing
- 1 Medium onion chopped
- 2 cups chopped celery
- 1/2 (14oz) bag bread cube bread stuffing
- 1 large granny smith apple, peeled, cored and diced
- 1/2 lb Italian sausage browned, drained and cooled
- 1/2 cup walnuts or pecans toasted on a sheet pan for 3-4 mins
- 1 stick butter melted
- 2 cups chicken stock
- 1 tsp kosher salt
- fresh cracked pepper
- For Turkey :
- 1 large onion
- 1 granny smith apple
- 1 cinnamon stick
- vegetable oil
- salt/pepper
- For Gravy :
- 1 stick butter
- 3/4 cup flour
- 3 cups chicken stock
- 1/4 cup sherry
