Irish Stew

Ingredients

  • 2 lbs. beef stew meat, cut into 1-2 inches
  • 2 tbs. vegetable oil
  • 1 bottle Guinness stout
  • 1 onion chopped
  • 1/4 cup tomato paste
  • 1 1/2 cups beef stock
  • 1 1/2 cups chicken stock
  • 2 stalks celery chopped into 1" pieces
  • 2 carrots chopped into 1/2" pieces
  • 3 sprigs of thyme
  • 2 slices of bacon
  • 3 Tbs. flour
  • Salt / Pepper to taste

  • Large enameled cast iron pot

Steps

  • Season beef with salt and heat oil in a heavy bottom pot over medium high heat
  • Brown beef in batches and remove to a plate or sheet pan
  • Lower heat to medium and cook the onion until soft
  • Add bacon and cook until browned
  • Add garlic and cook 1 minute
  • Add celery and carrots and cook 5 minutes
  • 1 flour and cook 1-2 minutes
  • Add tomato paste and stir
  • Add Guinness, Stocks and stir
  • Return beef to the pot, cover and cook on low for 2 hours
