Ingredients
- 2 lbs. beef stew meat, cut into 1-2 inches
- 2 tbs. vegetable oil
- 1 bottle Guinness stout
- 1 onion chopped
- 1/4 cup tomato paste
- 1 1/2 cups beef stock
- 1 1/2 cups chicken stock
- 2 stalks celery chopped into 1" pieces
- 2 carrots chopped into 1/2" pieces
- 3 sprigs of thyme
- 2 slices of bacon
- 3 Tbs. flour
- Salt / Pepper to taste
Cookware
- Large enameled cast iron pot
Steps
- Season beef with salt and heat oil in a heavy bottom pot over medium high heat
- Brown beef in batches and remove to a plate or sheet pan
- Lower heat to medium and cook the onion until soft
- Add bacon and cook until browned
- Add garlic and cook 1 minute
- Add celery and carrots and cook 5 minutes
- 1 flour and cook 1-2 minutes
- Add tomato paste and stir
- Add Guinness, Stocks and stir
- Return beef to the pot, cover and cook on low for 2 hours
