Ingredients
- 1 Eggplant
- 1 can San Marzano tomatoes (or your favorite spaghetti sauce)
- 1/2 cup parmesan cheese (I like fresh grated, but you can use store bought Kraft stuff)
- 2 cups Italian style bread crumbs
- 1/2 cup olive oil
- 4 slices Mozzarella cheese
- 3/4 cup shredded Mozzarella cheese
- Salt
- 2 eggs beaten
- 3/4 cup ricotta cheese
