Ingredients
- 1-2 Chicken breasts pounded thin, and cut into cutlets
- 1 cup or more of Sliced mushrooms (any kind will do, today I used cremini)
- 1/4 cup chopped shallots
- flour to coat chicken
- 6 tbs butter divided
- 2 tbs olive or vegetable oil
- 1 cup heavy cream
- 1/4 or more Cognac or brandy
- Salt/Pepper to taste
