Tri-tip Sous Vide

  • 2-4LB Tri-tip roast
  • Salt and Pepper to taste

I bought a prime Tri-tip from Costco the other day, and I've smoked them, baked them etc.. but never sous vide one. It turned out fabulous. It takes several hours for the fat to dissolve in the meat, but this was full of flavor. I made a mushroom gravy in case it was dry, and for the mashed potatoes, but honestly the meat didn't need the gravy.

  • Salt and Pepper the meat, and seal for Sous Vide.
  • Bring Sous Vide up to 129 degrees and cook for 2 hours or more.
  • Slice thin and serve.
