I love a good meatloaf, but sometimes can be a bit bland. I really enjoyed smoking this, it added some smoky flavor, and didn't dry out the meat. I cook it at 250F for about 2 hours. The last 30 mins, I coat it in the sauce.
Bring smoker to 250F. Mix bread crumbs and Milk together to form a paste and let sit for a few mins Sauté onions in butter until soft and let cool. Mix together the all ingredients and form a loaf on a pan small enough to fit on your smoker. Smoke for approx. 1 1/2 hours and then coat the meatloaf with the sauce and return for another 30 mins.
