Cesar Salad Dressing

Cesar Salad Dressing


  • 3-4 Anchovy filets
  • 2 TBS Dijon mustard (or more)
  • 1-2 cloves of Garlic
  • 1/2 cup Olive Oil Preferably Extra Virgin
  • 1/4 cup grated Parmesan Reggiano cheese
  • Plenty of fresh ground pepper


  • Food Processor, or little spinner processor

I've not found a bottled Cesar Salad dressing as good as this homemade version. It's easy and it doesn't contain egg yolks. You absolutely must use the real Parmesan cheese, not the stuff from a can. Give it a try - it has plenty of flavor !!

  • In a small food processor add garlic cloves, anchovies, mustard and take it for a spin until smooth
  • Add 1/4 cup of Olive oil and blend till smooth
  • Add the remaining 1/4 cup olive oil and blend till smooth
  • Add Parmesan, and pepper and blend till smooth.
  • Taste for additional salt or pepper.
