Chicken Zucher

Haven't had this dish in ages, and it's a very traditional swiss dish that we first had in Lucerne Switzerland. Deb loves it, so I thought I dig up and old recipe and share. Today we served it with egg noodles, but traditionally served with Rosti. Super easy, and plenty of flavor.

Saw some decent looking pork chops at publics and decided to buy them, even though I'm not all that great at cooking them. Then I set-off to learn to how to cook them still juicy and full of flavor. Give it a try !!!

Coq au Vin

I haven't made this in years, but we love it and we happen to have a spare bottle of Pinot Noir in the house. Today, I'm using boneless skinless chicken thighs, but you can use any chicken pieces you prefer. It's a light dish, that takes on the flavor or the wine that you are using. The chicken always comes out tender and it's full of flavor. I'm also skipping the bacon today, to make it a bit more healthy.

Ribeye Burger

I had bought some Prime Ribeye's from Costco, and thought I'd try to make one of them into a gourmet hamburger. Wow, it was worth the trouble of grinding my own meat ! Check out the fat content, and since you grind it yourself, you can cook it to really any temp you would like. I only wish I would have cooked it a bit less... Next time will be perfect.

Chicken Caesar Salad w/homemade dressing

It's been hot this week and felt like a light dinner. Had a chicken breast leftover from our pecan crusted chicken (recipe forthcoming) the other night, so I thought a light chicken Caesar salad would work nicely. I really like this dressing recipe. It has plenty of flavor ! Give it a try !

Fig Goat Cheese Prosciutto Flatbread

You can put anything on a flatbread, it's just a vehicle to deliver any flavors you want. Today had a taste for something sweet, tangy, salty... and went with this dish that I am trying to replicate from a restaurant I went to pre COVID, and unfortunately they didn't make it. It is pretty close to their version.
